Zita's favorite salad recipes

During our shared meals at Printa, we often find Zita packing even better salads for lunch. Since she is so at home in salad making, we asked her to share her two favorite recipes. This time we come with a pescetarian and a vegetarian salad, and at the end of the blog post we'll even show you how to make your personalized favorite!

Salads are a real vitamin bomb, so it's worth experimenting with them to make them part of your everyday life. They are light, refreshing and full of valuable nutrients. Still, many people still see salad as a boring dish, even though there are few more exciting dishes, since you decide what and how much to put in it, so the number of variations is endless. Making salad is also a great way to use up leftovers at home, the national dish of Hawaii, the currently trending poké bowl, was born this way.

Zita's secret ingredient is pumpkin seed oil, which, according to her, boosts all dishes, and she likes to use purple cabbage and kohlrabi for salad. Did you know? Purple cabbage is a very neglected vegetable these days, even though it is not only budget-friendly, but also a real superfood thanks to its high antioxidant content.
Tuna kohlrabi salad
Ingredients:
  • lettuce
  • 1/2 kohlrabi
  • 1/2 avocado
  • 1 small can of tuna
  • 3 spring onions
  • 3 radishes
  • pumpkin seed oil
  • linseed on top

Purple cabbage and cottage cheese salad
Ingredients:
  • thinly sliced ​​raw purple cabbage
  • 1/2 avocado
  • 2 spoons of cottage cheese
  • 1 spoonful of Greek yogurt
  • 5 cherry tomatoes
  • pumpkin seed oil
  • sesame seeds on top

1. What are your favorite vegetables?
Write down which vegetables you like the most, then head to the market! It's okay if you can't get everything you planned, and it's okay if there's something that's not on your list, but you can't resist it in the market.

2. Choose a protein source!
In order to live well with salad, it is important to include some kind of protein source. This can be any grilled meat, fish or tofu, but you can also choose legumes such as chickpeas or lentils. It is best to include oily seeds, which are rich not only in protein but also in other vitamins. Don't overthink it, you don't always have to toast fancy almonds on top of your salad, flax and sesame seeds, for example, are much cheaper, but equally nutritious and tasty solutions.

3. No salad without sauce!
Without dressing, your salad will be dry and boring. You shouldn't overthink this point either, as a little lemon juice or some cold-pressed oil might do the trick, but you can also experiment with other sauces (e.g. yogurt or tamari).

4. Insant boosters
There are ingredients that instantly brighten up any salad thanks to their intense flavor or exciting texture. Olives, capers, sun-dried tomatoes, spicy bread cubes, avocados and fresh herbs are also listed here.
